Lime Curried Carrots

Hello!  Welcome to 2014…on a side note, I’m finding that a lot of people are trying to deter people from New Years Resolutions…to not set yourself up for failure or disappointment.  I think it’s malarkey!  Set a goal and strive for it…it’s okay if you don’t achieve it right away or ever.  I’m sure with any resolution journey, part of a bad habit is changed to a good one…or a new, positive habit is formed.  So go for it, resolute away!

ANYHOW.  I had to share a new recipe I tried, courtesy of Dr. Johnny Bowden’s 150 Healthiest Crock Pot Recipes:

Curried Carrots with Cilantro Turkey Balls & Coconut Marinara Sauce


  • 2 teaspoons curry powder
  • 1/4 teaspoon salt
  • 3 tablespoons lime juice
  • 1/4 honey
  • 1 tablespoon ghee (clarified butter)
  • 2 pounds baby carrots

Put the carrots and ghee in the crock pot; in a separate bowl, whisk all other ingredients together.  Pour the whisked ingredients over the carrots.  Cook on low for 3-4 hours.  Carrots should have a slight crispness.

Let me tell you — these are a fantastic side to compliment most meats.  I’ve been eating them for four days now, sometimes as a warmed-up snack.  Delish!
