Sunday Seafood Caribbean Style


Good Evening!  Today I only had time to whip up one dish for my weekly meal planning, but that’s okay.  I have taco salad on deck, where I make the meat in the crock pot.  And will do that when I get home Tuesday night.  I’m on the road tomorrow and was on the road for 6 hours today.  I swear I’m not actually a big rig driver, although my hip flexors would now qualify, being they are in the “sit” position a lot lately.

ANYHOW.  Onto my recipe for the day.  This was adapted from a recipe book I have at home:

Caribbean Seafood Salad

Mix the following together in a large bowl:

  • 2 cans (12 oz) lump crab meat
  • 1/2 pound cooked shrimp
  • 1/4 cup unsweetened, shredded coconut
  • 1 cup diced mango
  • 1/4 cup sliced scallions
  • 1/2 small cumber diced
  • Chopped cilantro
  • Chopped mint
  • Dressing: teaspoon olive oil, one lime squeezed, teaspoon honey (whisk in separate bowl)
  • Pour the dressing on top and mix!

This is super refreshing and makes you feel like you are on vacation on an island somewhere.  So maybe it’s not a Fall recipe, but I was tired of chicken.  I wanted something I could make with seafood that could give me multiple servings this week. –this did the trick.  Enjoy!
